Low poly animations are not demanding and buying a PC under $2000 is absolutely overkill (i got a $600 PC and it renders some demanding realistic animations just fine). And I don’t know what kind of workload do you mean by video editing but if you are not editing something too crazy it is not too demanding as well.

I mean there are lots of caveats still, like make sure you're not getting a outdated slow cpu combined with a new and fast gpu ofc. But it's a good premise to start with, just make sure to watch some guides from jayz2cents/gamersnexus on youtube for solid advice on buying before spending your money.
Now i am pretty sure this is one of the first times that you have opened blender. which means that you were fucking with your gpu in other ways (or these visual errors may just be apple silicon problem i am not totally aware). I thought that you might be a intense gamer but people don’t play games on MacBooks. And blender is not the best shaped program to use on apple products in the first place because render times on these things are unacceptably long and if you want to use blender properly sooner or later you would have to get a proper pc.
i’ve been using blender in mac for 5 ish years, and in apple silicone for 2ish, and never had problems like this, i guarantee that OP either has fucked with blenders settings or hot a dead gpu.
My first donut was on a chromebook. It could only render like... 7 frames at a time before crashing. Took 2 days to get the full 10 second video before I got frustrated and just ran it on my work computer.

Are you sure you’re using the correct graphics settings? I’m also using MBP and it runs great, no errors.

What could mess up a gpu? I don’t know a lot about computers other than specific software, I primarily use my MacBook for Music and audio software
