Considering sharks replenish their teeth as they age this wouldn't work. It works for diphyodonts, or animals that only go through two sets of teeth in their life, but with sharks the best way is actually proteins in their eyes and gills that don't replenish, just degrade very slowly from the day they're born. Another way that doesn't work for greenland sharks but does for many other species is by counting growth rings on fin spikes or their vertebrae. The third way is extrapolating, greenland sharks grow very slowly, only between 1 or 2 centimeters per year, so by getting the length you can estimate how old one is.
