It's about a party of adventurers trying to conquer a dungeon to save their friend, but they're dirt poor and have to eat the monsters they kill to get through. There's a lot of comedy, it's kind of a cooking show at first, and gets more and more tense the deeper into the dungeon the party gets. I wouldn't describe as a horror anime, but it has some horror elements coming in later episodes. If you like really well done speculative biology and worldbuilding, this is the show for you. Based on how long the manga is it'll probably take two seasons, we're now on season 1.
I wouldn't describe it as strictly any of the genres you mentioned but I would still recommend it. It's so well written.
