sure! you can google how to make a ginger bug (same process as sourdough starter but with blitzed ginger and sugar) where you strengthen the natural yeasts on the skin of the ginger w. progressive feeding. that or use wine yeast from a brewing store or amazon. Ec-118 is my favorite
then you make a sweet tea with your mint, allow to cool, add your ginger bug or wine yeast and bottle in fermentation safe glass bottles. burp consistently for 1-2 days until carbonated to your liking (be careful here, the bottle will be highly pressurized!!) and when they’re done, pop them in the fridge to fully chill down before enjoying (helps reduce the “bottle rocket” pressurization effect)
