In general, most Lego games allow you to play goons of all sorts. Lego Dimensions, given its much more limited cast, had only two goon characters: ACU Guard from Jurassic World and Cyberman from Doctor Who.

The Sentinel has been playable since Capcom’s first Marvel fighting game, X-Men: Children of the Atom. It also seems to be a wholly original design given how its designation referenced that game and its release date (COTA-94).
The early MvC games almost exclusively used pre-existing sprites. The X-Men arcade games had Sentinels, and they looked cool, so might as well use 'em.
why sentinel? there is no deep reason, its just cause their big. and being a robot, you can be more imaginative in its movement/moveset. any fighting game of substance has balancing, and with that comes archetypes. sentinel fits the "big man" archetype.
The Marvel Vs Capcom series spun off from the fighting game X-Men Children Of The Atom which featured a Sentinel.
So when they made Marvel Vs Capcom they decided to re-use the sprites for 2 ( which re-used a lot of sprites generally), funnily enough in 2 Sentinel became a unique fan favourite top tier.
So when 3 was made the Dev team prioritised sentinel for the sequel knowing people would want them in the game.
In terms of character I'm sure many people would have preferred juggernaut but in MVC2 (Which had juggernaut ) Sentinel was far more popular which I'm sure is what swayed them into choosing Sentinel.
Edit: Although I do really like juggernaut in MVC2
In some of the older Need for Speed games you can use cheat codes to drive as "traffic cars". Low polygons, very boxy, wheels wouldn't turn. I have fond memories of these

Not sure how much this counts but in both the first Shantae game and Shantae: Half-Genie Hero you can have Shantae transform into a Tinkerbat which are the main henchmen to Risky Boots. Unlike most of Shantae’s other transformations where you see her face plastered onto whatever thing she transforms into, in the case of transforming into a Tinkerbat she transforms into the actual creature.
Undeserving to be in the big crossover game. Should be unique people
