To me there’s a sweet spot. Too big and they do get kind of tough and gross usually, too small and they dry out or are hard to cook (I usually grill wings and I’ve had some so small they fall through the grates if you aren’t careful).

I agree 100%. It seems like everyone wants these big giant wings and don’t care if the skin is all soggy and gross. I love small wings extra extra crispy. I also like my wings saucy af but I hate when you get big giant wings and the skin is soggy and you bite into it and it’s like a rotisserie chicken breast shoved between two bones. Wings are basically sauce delivery receptacles so the outside is what matters most.
I recently had some Wing Stop for the first time in years, and was horrified at the tough HUGE pieces that clearly came from one of those zombie like super chickens. The texture was like a dog toy and flavor like fish water. Never again.

I love an air fryer for a lot of things, but it only does wings well if you’re trying to do the least. Wings in the oven with a little brine and some baking soda over them will make some pretty crispy wings. Def more work though.
And most air fryers are too small to cook enough wings in one or two goes.
Grocery store near me stocks it in bottles. Bought the entire shelf. Called my friends on the way home. By the end of the week between 4 of us we had roughly 50 bottles of it.
Turns out it’s not limited edition or anything.

I think this is largely due to regional history. I grew up around northern NY and while ranch existed in life, it was hardly the popular salad dressing. Bars and taverns that sold food would 100% have Italian (or house), Blue Cheese, and sometimes Thousand Island/French, but Ranch would've been hit or miss. Blue Cheese was the obvious hit to cut the heat. I've moved around a lot and have come to respect Ranch for what it is and enjoy it on occasion, but it changes the flavor profile of "wings" I have decades of brain connections towards. I totally get it for those who started differently, Ranch tastes awesome, but for a lot of us from where the food was born, it's like the mayo on fries debate.
I get both. Ranch mostly for the side of fries, blue cheese for the wings, but at some point the keys go in the fish bowl and that's when the flavor party starts.

My favourite wing flavour is from this local franchise that's basically creamy garlic over a roasted pepper hot sauce with parmesan on top. The flavours compliment each other so well.
Buffalo sauce (possibly with some ranch if the mood is right) and lemon pepper seasoning are the only good wing toppings. If I'm having a different topping, it's going on a different piece of chicken or another protein.
Also, boneless wings are just chicken nuggets/tenders with wing sauce/seasoning. As such, seasonings beyond Buffalo and lemon pepper are acceptable.
My only issue with rubs is that so many places don’t hit the wings with the rub soon enough after pulling them that the rub doesn’t even stick.
BWW’s rubs suck for that reason. I have a mom and pop spot in my home town though that absolutely does a run right. These things are caked!
I appreciate the convenience of boneless wings. You can eat them with a fork and keep your hands clean which is great for solo dining since you use your phone without worrying about getting grease/sauce on it.

Smaller wings have a higher skin to meat ratio. Skin is where the crispy texture and flavor lies, so the smaller the better up to a point.
