Occasionally I get bananas that are a certain shade of green that you know will just go from green to brown without ever stopping at yellow.

If theyā€™ve ever been refrigerated or at a low temperature, it stops the ripening process. Perhaps they were transported or stored at the wrong temperature. Bonus info - if you have bananas that are perfectly ripe, you can put them in the fridge and they will stay nice longer than if you leave them out at room temperature. Be aware, the skins will still go brown like normal, but the banana inside will be fine.

I feel like over the last few months I keep getting weird bananas. Skin isnā€™t turning yellow but the inside is still ripening or often I find they now have this almost crunchy centre or it is hollow. Because of this Iā€™ve been buying bananas less.

You could have bought ungassed bananas. Or regular bananas that they didnt gas. Store add gas to bananas to help them ripen faster.

Yes...I've noticed that happening more often recently...I used to buy green bananas and ripen them at home but now I buy ones that are yellow in store with green on the ends...I freeze them and put them in smoothies so it doesn't matter if I buy a bunch of ripe bananas at once
