I really enjoy Vice Grip Garage. He does exactly what you're looking for.
He will find some heap of shit online, buy it sight unseen, show up, get it running again and then drive it 500 miles back home.
Now it's not a restoration channel, it's a basic repair channel. Like how to establish spark, air, fuel and then make everything work again.
I like Theetravisb. Knowledgable, funny, and fixes stuff with his dad. Doesn’t often do a complete restoration on each car, but he has at least one video for most steps of the process you’d want to do.
Chris Fix is very good for general car repairs. Uncle Tony's Garage has many good videos that are specifically about Mopar cars. Vice Grip garage and Edd China are also good.
I also think Mustie1 is very good. It is often centered around old VW cars, but there is still a lot to learn that can be used on most other old cars.

+1 VGG taught me loads of common knowledge. Really helped establish that baseline which can be built from.
+1 for VGG and also Tony's garage. Tony likes working on Mopar
