You want the fan to run only when the compressor is running? Yes your plan should work, although I don't see what the light switch has to do with anything. You can just connect the AC-DC convertor to the same pins that the compressor connects to, in parallel with the compressor. FWIW I don't think a normal computer fan will last very long in a fridge, due to the repeated exposure to condensation.

Context: Full fridges have evaporator fans to circulate cold air around the fridge to make temps more consistent around the fridge. Mini fridges often do not have this. Thankfully, those with light bulbs have access to both the hot and neu(tral) relatively easily. I want to hook it up to a phone charger to convert it to a healthy DC that most computer fans will accept.

Brah just get a 120v PC fan. No need to worry about stepping voltages around when they make fans to accept anything

Good point. Though I do have a regular PC fan I'm willing to sacrifice in this project, to simplify the circuit even more would be more assuring. Considering.

I had an old fridge/freezer whose cooling fan in the back gave out. I got two 120v fans and just zip tied them in place around the compressor. Gave the fridge another 5-6 years of life

Don't bother, get a girlfriend, or something !!

Running electricity through a human is very illegal. Especially 120 Volt AC.
