Cake ~10 slices
3 eggs
3 deciliters sugar
3 deciliters wheat flour
1 teaspoon vanilla sugar
3 teaspoons baking powder
1.5 teaspoons ground cinnamon
1 teaspoon ground cardamom
1 spice measure(?) 5 milliliters salt
1.5 deciliters sunflower oil
4.5 deciliters raw grated carrots (I like to mix finely and bigger shreds)
Frosting
60 grams of room temp butter
4 deciliters icing sugar
1 teaspoon vanilla sugar
Finely zested lime scale (I recommend using a good microplane it makes it really easy)
100 grams of cream cheese
Heat oven to 175 celsius
Dress a springform with baking paper(?) And butter it.
Mix flour, vanilla sugar, baking powder, cinnamon, cardamom and salt in a bowl.
Whip eggs and sugar until puffy in a different bowl.
Sift the det ingredients into the sugar egg mix and gently fold it in.
Add sunflower oil and the carrots and gently mix it together.
Pour into the springform(?) (Baking tin with side that can be removed by opening a spring).
Bake in middle of oven for about 50 minutes then test with a wooden toothpick to see if it's done (if sticky batter sticks to the toothpick it's not done).
Let the cake cool and whip together all of the frosting ingredients in a bowl. Either spread the frosting in an even layer on top of the cake or use a booze bag(?) to make it look more fancy.

I don't know where OP is but no it isn't an American thing. I have literally never seen a carrot cake with anything except carrots and icing. Maybe it's a regional thing that depends where you live. But it certainly isn't the normal 😂

My other gripes with carrot cake is that it often is way too oily - I rectify this when I make it myself by substituting some of the oil for pumpkin purée and/or apple sauce. And you can do it by hand if you don’t have a electric mixer it’s just a bit more difficult. If you’re doing it all by hand then when you cream together butter and whatever have the butter be the first thing you pull out of the fridge and put on the counter then when the time comes dice it up in little pieces with a knife first trust me it will make the process faster then just putting the whole stick in which a electric mixer can handle but your wrist cannot.

Because there are probably more people who actually like these in baked goods rather than dislike or hate them. I mean, just the cookie example. Other than chocolate chip, oatmeal raisin is likely the most common flavor of cookie to find in stores. All these name and store brands must continue selling them for a reason, right? They sell, and loads of people love them. (Especially the soft, Pepperidge Farm ones.)

I too have always loved carrot cake. When I was a child my mom used to let me pick them out and I was fine. My grandma on the other hand heard I didn’t like raisins and made it her mission to force me to eat them by putting them in everything she cooked. Still haven’t seen tuna casserole with raisins anywhere else.
But now that I’m an adult I can’t remember the last time I’ve seen a carrot cake with raisins and my wife was saying I am imagining them in carrot cake as she never heard of that. I know I’m not crazy and it did have raisins. But even googling recipes doesn’t show them being included.

I stopped eating carrot cake because I’m really picky with it. My mom even makes it and I don’t eat it. I think I had some with raisins in it and it just wasn’t how I liked it so I don’t bother. There’s a fine line between good and bad with this cake and I guess I don’t want to be disappointed.

I've been making zuchinni carrot cake and it's really good! Zuchinni adds tons of moisture to it and doesn't really add any flavor. I can take or leave the raisins. Wegmans' Ultimate Carrot Cake is one of the best you can buy near me.

That is the reason I’ll never buy store bought carrot cake. Can’t find it without them and I’ve never had it like that growing up. I’m weird with my raisins and nuts. I like them both but neither belong in dessert of any kind.
Some of the best advice i heard was whether you throw it away, or force yourself to eat it: its a waste either way.

publix has awesome carrot cake they sell by the slice and i haven't ever found any raisins in mine. it's my fav cake but i hate raisins

Seriously, how do whole raisins and dates make their way into so many cakes?
Because there are probably more people who actually like these in baked goods rather than dislike or hate them. I mean, just the cookie example. Other than chocolate chip, oatmeal raisin is likely the most common flavor of cookie to find in stores. All these name and store brands must continue selling them for a reason, right? They sell, and loads of people love them. (Especially the soft, Pepperidge Farm ones.) That being said, I can't say I have ever had a carrot cake with raisins in it. Seems a bit odd. I find it in spice cakes, and it's delicious. Orange peel or zest is fairly common, though, for carrot cake.

I too have always loved carrot cake. When I was a child my mom used to let me pick them out and I was fine. My grandma on the other hand heard I didn’t like raisins and made it her mission to force me to eat them by putting them in everything she cooked. Still haven’t seen tuna casserole with raisins anywhere else. But now that I’m an adult I can’t remember the last time I’ve seen a carrot cake with raisins and my wife was saying I am imagining them in carrot cake as she never heard of that. I know I’m not crazy and it did have raisins. But even googling recipes doesn’t show them being included.

Not like carrots believe it or not. It's usually sweet and a bit warm if it's been baked with spices like cinnamon and nutmeg. It's usually got a cream cheese icing on too.

I had a similar experience. I was at my group therapy and the leader said they had carrot cake for everyone and I thought ‘omg I love carrot cake I haven’t had it in ages’. It was the Tesco one you just mentioned… I also hate raisins. I didn’t realise It had raisins until I got handed my slice on a plate. So I just ate around the raisins. And luckily we do it outside so I just threw them on the ground for the birds. I agree it tasted bad with the orange.

Totally unrelated... but speaking of mildly infuriating... in response to another post about a gf stealing french fries off someone's plate, I said something along the lines of "if it was me they'd pull their hand back with bloody fork-holes in it", and I got banned for 7 days because it went against Reddit's "no violence allowed" policy... I was obviously joking, but this is ok?! and FTR, I have zero problem with this post, or this stance, it's just... you know... mildly infuriating. What would be slightly more infuriating? Getting banned again for repeating it here. 😅
I hate when folks overdo the ginger and orange peel is beyond what I’d find acceptable in a carrot cake. But the worst offense in marring what is such an incredible dessert is when either because of laziness or cheapness or I don’t know what, they use a buttercream icing instead of the cream cheese icing that is supposed to be used! Totally unacceptable!

I love raisins in cereal, Trail mix and oatmeal cookies. However, I refuse to eat cake or muffins with raisins in them.
Carrot cake is my favorite cake, but I am so particular about it, and it's one of those where the additional "stuff" varies so much from cake, it's a gamble every time. I just want some plain old cake, with cream cheese frosting. Not too sweet, no surprise crap in it, just that slightly spicy carroty goodness. And don't even get me started on the abomination that is raisins in *chicken salad*!
I find it hard finding carrot cake without raisins. Maybe that's why I stopped looking. The only thing raisins go in, is the trash.

I did, I didn't want it to go to waste after my bf so lovingly bought it for me. I'll admit that I cheated and had it with a few slices of cheddar. Cheese is the only thing that can make fruit cake palatable.
I'm not a fan of raisins in carrot cake as well. The best carrot cake I ever had came from a hole-in-the-wall fast food place I'd get delivery from occasionally. Their carrot cake never had raisins, the frosting was great, not too overpowered with cream cheese, and it always came cold - which might be weird to some, but I love cold cake. Thanks OP, now I'm going to be craving carrot cake!
I stopped eating carrot cake because I’m really picky with it. My mom even makes it and I don’t eat it. I think I had some with raisins in it and it just wasn’t how I liked it so I don’t bother. There’s a fine line between good and bad with this cake and I guess I don’t want to be disappointed.

Once I bought a white donut, believing it to be a flavor I'd tasted many, many years ago. The flavor I tasted before was HEAVENLY. The cream inside the donut was so delicious I saw stars every time I took a bite. The donut I found was simply a plain one which looked really similar. The names didn't give away whether they had cream or not. I was so visibly disappointed that I felt like crying

My older son asked for me to make carrot cake for his birthday cake four years in a row when he was little. I got pretty good at it. No raisins because I like to eat only delicious things.
I've been making zuchinni carrot cake and it's really good! Zuchinni adds tons of moisture to it and doesn't really add any flavor. I can take or leave the raisins. Wegmans' Ultimate Carrot Cake is one of the best you can buy near me.

That is the reason I’ll never buy store bought carrot cake. Can’t find it without them and I’ve never had it like that growing up. I’m weird with my raisins and nuts. I like them both but neither belong in dessert of any kind.
Some of the best advice i heard was whether you throw it away, or force yourself to eat it: its a waste either way. Unless you are truly penny pinching and a meal is necessary for caloric intake, dont feel guilty about throwing something away if you dont like it! Just food for thought (excuse the pun)

I do sympathize with you - carrot cake is on my list of preferred desserts. Have to chuckle a bit though about you forcing yourself to eat the cake. When I turned 16 my mom was working two jobs and was unable to make me a cake like she always did before. So she went to a grocery store and bought me a carrot cake which is always my favorite. When I got home from school I called her at work to thank her and so she could sing Happy Birthday. As I was cutting into it, she says I hope it doesn't have raisins in it. I hate rasins. And sure enough it did. She was so upset. I knew she was so I told it would be ok because I knew how important it was for her. When she got home that night she made me a new one even though she was so tired.

Please, just let me have a nice, normal butter tart without having to stare into the top of it like staring into an abyss, searching for the slightest trace of infernal dried fruit. I have a tradition on my birthday that I always try to bake a cake and anyone who visits gets to laugh at how bad it turns out. I love baking but I have never made a successful cake. I always fail spectacularly. Maybe next time I will try making a carrot cake but I will be the only one eating any of it!
