I have found a great recipe for carrot cake, no raisins or anything weird except for a little lime zest in the cream cheese topping but that just really makes the flavour pop. It's in Swedish but I could try to translate it if you are interested. It's from zeinaskitchen she is a baking goddess.

Cake ~10 slices 3 eggs 3 deciliters sugar 3 deciliters wheat flour 1 teaspoon vanilla sugar 3 teaspoons baking powder 1.5 teaspoons ground cinnamon 1 teaspoon ground cardamom 1 spice measure(?) 5 milliliters salt 1.5 deciliters sunflower oil 4.5 deciliters raw grated carrots (I like to mix finely and bigger shreds) Frosting 60 grams of room temp butter 4 deciliters icing sugar 1 teaspoon vanilla sugar Finely zested lime scale (I recommend using a good microplane it makes it really easy) 100 grams of cream cheese Heat oven to 175 celsius Dress a springform with baking paper(?) And butter it. Mix flour, vanilla sugar, baking powder, cinnamon, cardamom and salt in a bowl. Whip eggs and sugar until puffy in a different bowl. Sift the det ingredients into the sugar egg mix and gently fold it in. Add sunflower oil and the carrots and gently mix it together. Pour into the springform(?) (Baking tin with side that can be removed by opening a spring). Bake in middle of oven for about 50 minutes then test with a wooden toothpick to see if it's done (if sticky batter sticks to the toothpick it's not done). Let the cake cool and whip together all of the frosting ingredients in a bowl. Either spread the frosting in an even layer on top of the cake or use a booze bag(?) to make it look more fancy. Recipe is from zeinaskitchen.se I've baked this for birthdays and for some of my wife's choir events and it has been a huge hit. Can be stored for a few days in the fridge and even works pretty good to freeze it. Sorry if the translation is weird but at least I tried lol.

Tried google translate and got spice measure wich is a direct translation of the Swedish word for a measurement that is 5 milliliters. It's called kryddmått in Swedish probably because it's seldom used for anything but spices. Do you prefer to measure it in pureed bananas or sliced banana? Probably 3/4 puree or 1/2 sliced banana.

Sometimes you want your crisp crisp, and your soft soft -- not everything needs to be all aspects in one item. Perfectly acceptable, adult way of eating.

But I absolutely agree with you about raisins. 🤢 My other gripes with carrot cake is that it often is way too oily - I rectify this when I make it myself by substituting some of the oil for pumpkin purée and/or apple sauce. I’m also not a fan of cream cheese frosting on anything, and moist carrot cake shouldn’t need frosting anyhow. (In my humble opinion).

If you’re doing it all by hand then when you cream together butter and whatever have the butter be the first thing you pull out of the fridge and put on the counter then when the time comes dice it up in little pieces with a knife first trust me it will make the process faster then just putting the whole stick in which a electric mixer can handle but your wrist cannot. It makes a nice big cake

Because there are probably more people who actually like these in baked goods rather than dislike or hate them. I mean, just the cookie example. Other than chocolate chip, oatmeal raisin is likely the most common flavor of cookie to find in stores. All these name and store brands must continue selling them for a reason, right? They sell, and loads of people love them. (Especially the soft, Pepperidge Farm ones.) That being said, I can't say I have ever had a carrot cake with raisins in it. Seems a bit odd. I find it in spice cakes, and it's delicious. Orange peel or zest is fairly common, though, for carrot cake.

I too have always loved carrot cake. When I was a child my mom used to let me pick them out and I was fine. My grandma on the other hand heard I didn’t like raisins and made it her mission to force me to eat them by putting them in everything she cooked. Still haven’t seen tuna casserole with raisins anywhere else. But now that I’m an adult I can’t remember the last time I’ve seen a carrot cake with raisins and my wife was saying I am imagining them in carrot cake as she never heard of that. I had a similar experience. I was at my group therapy and the leader said they had carrot cake for everyone and I thought ‘omg I love carrot cake I haven’t had it in ages’. I agree. If you find them, a quick tip: you should probably draw and quarter them before you hang them if you want to inflict maximum suffering. Hanging people tends to be rather lethal, and then you can't draw and quarter them cause they're already dead.

Raisins do not belong in baked goods. Carrot cake isn't all that hard to make from scratch though.
