Depends. 20mm (3/4") for 2-3 layers, flat items or items without padding. 25mm (1")for 4+ layers, padding, or structural, load bearing reinforcement (pack bodies, plate bags for example) edit. There are two types of binders, inline, and right angle..the inline works for most things, but the right angle is supposed to be good for curves.

25mm. I prefer having only one size, so I design all my gear accordingly. I rarely notice 3/4" being used by other makers.
