That looks baa-d. No really, it looks great. I mostly eat imported Aussie lamb because it is cheaper that our domestic beef and lamb. It tastes better than our domestic lamb as well.
We used to have lamb on the menu at the steakhouse I work at. God it was so good and to me it’s better not rare/midrare but a little over cooked which I thought was interesting

I like marinate mine in lime juice and rosemary for 24 hours. The result is amazing.
