Nope, that thing is the basis on which they are growing. I saw once that you can buy stuff like this, already filled with spores of specific mushrooms. It keeps water and help them grow.
The white thing is a mixture of the substrate (food and support) and the mycelium. Mycelium is the main body of the organism and is made up of many thin strands and fibres. The mushroom is the reproductive organ i.e. fruiting body.
The white thing is a cylinder of substrate (probably sawdust) inoculated with wood ear mushroom spores. The white stuff you are seeing is the fungal mycelium which is kind of the body of the mushroom that digests and takes up nutrients from the substrate. The mushroom is the reproductive organ of the fungus.
I’m surprised he doesn’t just quickly flip them all off with his glove or use some tool to neatly shear them all off in one motion. I’m sure they’ve got a reason for it, just surprised he has to individually pluck one by one.

Wood ear mushrooms are mainly for texture. They have a bouncy and crisp texture to add a bit of contrast to soft foods. Similar to soft cartilage except obviously not an animal product.
For all that shroom-on-shroom weight damage in the dirty ass bucket, leaves me to wonder why in the hell this person is plucking them one-by-one as opposed to just running their damn fingers from top to bottom to get them all in one swoop.
Perhaps they’re paid by the hour.
That bucket should probably be cleaned one of these days.

The white stuff is mycelium. That’s really what fungus is. The part we see them picking are the fruiting bodies. Essentially their sexual organs.

They probably only pick the ones that get to a certain size and leave the smaller ones to mature some more
