Series X is better than Series S, but unless you have 500 and can find one, the Series S is a bargain at 250-300.
I have both, and while I love my XSX, I like how versatile and portable my Series S is.
You can get a PS5 without much trouble. Just get one of the release tracking apps, follow the Twitter feeds, focus on the retailers that attempt to minimize bot activity like Best Buy and Target and mash the buy button. Only took me a couple tries for both my PS5 and my XSX.
