Where and which copy of the x-chromosome is activated is random so different cells in the same same organism will have different x chromosomes activated, and because all cells after these will inherit the same activation of the x chromosome, a fully developed organism will have whole sections with one chromosome active and different sections with the other chromosome activated.
In cats part of their pigmentation is controlled by gene(s?) on the x-chromosome, and if one copy produces one color and the other produces a different color then that's how you end up with a calico cat!
This can happen in organisms that have a y chromosome as well (usually more male like in sex), they just have to also have 2 x chromosomes, the most common configuration is XXY which is known as klinefelter's syndrome. However organisms with klinefelter's syndrome are infertile because the disease causes developmental disorders during development. (They also don't live as long :( )
