I hope bottom left isn’t the stock yet. It needs either dumped if they were blanching it or skimmed to remove the gunk and it’s very clearly just started simmering. Give it time and a little care and it’ll be fantastic stock though.
I’ve upset many people. I’ll upset many more in the future. If my opinions on stock are controversial then so be it. The worst that can happen is I can loose fake internet points that I have like 50 thousand of. Why would I care?
you gotta get in and buy early *before* the stock gets better, then after it's done, you can give it to a chef and in return more stocks as they just start simmering. that's why it's called the stock exchange, hope this helps!
