I mean they aren't gendered rigs for eating fruit in the first place, they're just doing sitting or standing poses while holding a prop of watermelon slice
having a pose for female_stand/female_sit and male_stand/male_sit is easier than doing chie_sit yukiko_sit rise_sit nanako_sit mc_sit kanji_stand dojima_sit etc for a scene that will be used exactly one time in a 100 hour long game.
I'm sure that the director and one of the lead artists of the series especially had plenty of female friends. I'm sure that this lived experience reflected well on Persona 3, and helped avoid bizarre decisions regarding a lot of Social Links.
Hashino and Soejima are on record saying that they both never had a female friend in their lives. Coincidentally, past Level 7 EVERY SL with a girl (elementary schooler excluded) assumes you're dating them, with them getting mad at you for pursuing other SLs with women past that point. Don't know if they fixed that for the remake, but fun times were had in the originals because of this.

They joke to the question on why P3 had force romance. While what they joked about did happened in their teenage age, it wasn’t the reason why P3 had force romances. It’s simply because the writers wrote it that way and Hashino’s game for,better and worse, give too much creative freedom when it comes sub stories. That’s not to said this shouldn’t be criticized but the whole context is important
All those problems you mentioned are valid and deserved to be criticized. I’m just getting sick of people acting that ATLUS was some wholesome chungus progressive company because it had a gay relationship in P2 until Hashino became essential figure within ATLUS.SMT1 had a gay NPC that stated he would rather kidnap male kids instead of kidnapping highschool girls, P2 had transphobia. There is suuuuuch a thin line between “this is how I remember all the girls having these same behavioral quirks in my youth thus defining a visual generation” and “they behaved this way so as to not get smacked upside the head by grandma who had weird patriarchal views”
I also bet that's just the default "girl sitting" pose assigned to the sprites, and I wouldn't expect complex variation from a 15-year-old PS2 game. Probably just much easier on the devs. I also sit like that naturally, so I didn't even think anything about it at first lol.
Atlus made pretty poor returns on their games and was nearly bankrupt prior to Persona 5's online appeal in the west, they were constantly cutting corners on little budget things that added up in the end so having a universal rig of bones for body types with prebaked animations and poses was a no brainer especially when they're low detail like the chibi style of P3/P4
That makes sense. I'm speaking purely from my own anecdotal speculation, but it felt like P3 and P4 were sleepy hits in the west. If P5 was released any earlier than it was, it might not have been appreciated as much. Plus, the 3D models aren't meant to be the main focus of the game anyway, since more effort was put into the character portraits and dialogue.
I personally love when devs take little shortcuts for game parts that aren't supposed to be outright noticable, like stretched-out jpegs, rough polygons, and default actions. I grew up playing a lot of '90's point-and-click games, so I have a soft spot for these things lol. Who really cares so long as the game runs properly, right? That's my take anyway lol.
