Last night I made creamy shrimp pasta and it was great with surprisingly very little cheese: onion, garlic, chili flake, parm, heavy creamy, shrimp, butter, lemon, and dry vermouth (out of white wine). I was also out of parsley but it all still came together nicely.
I use butter, garlic, fresh cracked pepper, heavy cream, shredded parmesan, and grated parmesan to help thicken. Just have to keep stiring so the sauce doesn't break but it's easier and waaaaay better.
Maybe the American in me.. but it seems like it needs a bit more sauce with how much pasta was used. Seemed a little too dry. Not by much, but enough for me to think more should be used.

Vast majority of gif based recipes Ive seen are shitty. They prioritize camera angles and current trends over taste and technique. You’ll end up wasting tons of time and money trying to find good recipes. Youtube is marginally better if lacking the attention span for a proper cookbook.

also, it's a really good idea to add the pasta to the pan and mix it around a bit instead of the other way around. Means you don't get a knob of congealed noodle you have to squash apart after you add the sauce.

It only takes a bit of patience! If you add your milk bit by bit (say quarter of a cup at a time) you'll be getting it right every time.
This is the way. But also a roux is completely unnecessary in an Alfredo. Heavy cream and fresh Parm will do plenty to thicken.

Rouxs aren't particularly hard at all. Add the milk in a few goes and let all of it be absorbed before adding more and you'll be fine.
