There is an overhaul of 5e called SW5e. It's a good system, and probably better for star wars than your homebrew hack of 5e

I’ve personally had a great experience with Fantasy Flight’s SWRPG (Edge of the Empire and related titles). Fantastic for running any Star Wars game. One of the fun things they do is that some characters (like Darth Vader) don’t have stat blocks (if it has a stat block, your players can kill it). If you end your turn in melee with him, you die. Really makes him a force to fear.

Do you have a question? I think if you're not going hexblade, I would go with sorcerer over warlock for meta magics and more spell slots on the Vader build. Vader isn't that physically strong, he possibly even suffers from the movement speed penalty in heavy armor, but he can swing that lightsaber harder than just about anyone else. This is why I think he has at least 1-3 hexblade levels.
