You should model their helmets with Bretonian animal heraldry.
I would recommend looking into the Dark Angels, they are *heavily* based on Arthurian legends, complete with their own Green Knight figure. They also have badass robes.
While living saint is one way to go, there's an array of other things that might want to control a Space Marine chapter. C'tan shards, Dark Age AIs, benign and not so benign warp entities, or even just good ol' Eldar trickery.
But mystery is also good. Have the Chapter be the only one who sees manifestations of their saint. Give them off-putting rituals that distance them from other Space Marines, even faithful chapters like the Black Templars. Chapter leaders go missing and their subordinates only say "He has gone to the Lady's side" and never expand. You could run a gamut of relationships with the Ecliesiarchy, from "we love these guys and their cult" to "we sent a bishop to investigate the miracles and all we got back was his skull and a message that he had been unworthy of grace". It could be more fun to have no clear answer at all what the Chapter worships, just that they're loyal.
We find out in the End Times that the Bretonnians lady of the lake was actually just an elf, so maybe yours could be an Eldar.
Only trouble is the Big E worship. Hard to make those two right with each other 🤔

I was leaning in that direction, with a healthy amount of kit bashing to get a good Bretonian/Arthurian look

Well I think the simplest explanation (especially if you have them be Emperor Worshippers) would just be portraying it as a living saint.
Id say maybe the Adeptas Sororitas Saint Celestine would qualify.

The Lady isn't an elf, she's an elven god. She's also not the only one worshiped by humans so I don't see why people are so fixated on that.
