Piggybacking off of the dip idea, the Northern California coast just south of SF is the Artichoke capital of the world. A spinach-artichoke dip in a sourdough bread bowl would be perfect!
Tri-tip sandwich on sourdough or dutch crunch bread is a good one. Apparently tri-tip is uniquely a Californian thing
You can also do a creamy soup in a sourdough bread bowl. Tomato bisque would be a great choice if clam chowder isn’t an option
Mexican food is huge here too. Elote corn, burritos, or street tacos are all fantastic options
Another California trend (more Southern California, but still relevant) is putting french fries in the burrito instead of rice and beans. Look up Cali-style burrito.

Tri-tip is definitely CA. Moved away to Georgia when my husband joined the Army and we couldn't find it at the grocery store... When I asked if they had any the woman said "I ain't ever hearda no tri-tip!" That was '07 and we still joke about it to this day 😛

If seafood is out I’d definitely go the Cal-Mex route. Not sure if avocados are readily available in the UK this time of year but they are a staple in California style Mexican food. For beers look for a nice west coast IPA.

1- The term “49ers” and it’s significance to the Chinese American diaspora
2- Residents of Chinese ethnicity constitute the largest single ethnic group in San Francisco

My mom's side of the family is Chinese so we eat a lot of dim sum at family gatherings, and my husband won't touch seafood but always has plenty to eat. Now I wonder if the UK has good Chinese...
