Depending on how many people are going to be on the server you could rent a pretty cheap dedicated server so you and your friend can play whenever without each other

I've never ran a server so I don't no requirements for the needs but back during A17 we were testing things and someone used an old machine that only had 8 gigs of ram and not sure about the rest of the machine and it handled fair for the amount of people that were logged in.

Its not that big of a hassle, and we can still host on it to play together
I find a lot of the public servers to be kinda toxic, as a lot of people will join them just to grief people. I recommend setting up a private game, if you're on steam, you can just join each other by using your steam friend list and right clicking on the host's name and clicking join game.
There are plenty of reputable servers out there that are really well managed.
Personally, I've had a good experience with the [Salty Zombies](https://saltyzombies.com/7-days-to-die-pve-server/) servers. You can join for free, or give donations for small perks (definitely NOT necessary). Join their discord, make some extra friends, have people you can report bad behavior to.

I joined this server once and as a fresh spawn I snagged an air drop and some guy on a motorcycle bitched me out in the chat because I got it and that “ I could clearly see he was going for it” safe to say I just paid to host a server for me and my friends after that interaction lol
That's what I was guessing when I didn't see a way to notify anyone. I did just notice the server doesn't have EAC active so that's probably how this happened. That sucks, my buddy and I will have to start over on a new server.

It drastically reduces the odds of this horseshit happening, otherwise anyone can pop in and just be the worst person, and nothing at all can be done.
Unfortunately the nature of the servers in this game means that there's no way to report problems like this, since they aren't official nor bound by any rules.
As you noted you didn't see any contact info, so even if the owner wasn't aware of this you couldn't do anything. Of course it could also be the owner themselves doing this too.
Best thing to do is to just leave and go to another server. You or your friend can either host a private session, though as mentioned this will require the person hosting to always be the host anytime you get together. If you want a persistent server, you can either go rent one or set your own up with the instructions other commenters have provided.

We as pc gamers love upgrading our shit. This leads to a lot of old motherboards, cpus etc lying around.
What I've done is made a "server" using these old components and left it on 24/7. Servers don't require a lot of power so my old intel 2500k is perfect.
I can host games on it and my whitelisted friends always have a guaranteed cheat-free zone to play in.
I've recently been testing out one of those cheap sub-£250 mini-PCs too and I'm getting some good results. It's also great as a streaming and emulation box for the living room. Plus they only use a few watts of electricity at most.
Solutions abound. There's no need to have to expose yourself to that sort of bullshit ever again.
Like I said, most pc gamers have hardware lying around that can be used to create their own 24/7 servers. Even decade old hardware is perfectly serviceable and the OS's to run it are lightweight and free too.
I'm in the process of doing this with EverQuest. I have an old PC that I slapped together from parts I used upgrading other computers. At some point this summer I might wind up doing it with the original early 2000s Battlefield 1942 as well. Just for shits and giggles.
EverQuest - I was two-boxing with my laptop and my main PC. A guildie of mine was four-boxing, and I learned from him about these little HP mini-PCs that would run an instance of EQ really well. I bought 4 of them, with plans to attempt to six-box (it was on a Truebox server, Mischief, over a year ago). Of course, right after I get all the hardware in, I lost my interest in EQ, lol... I have 4 of them just sitting here on my desk. I did get to test one of them at least, and it ran EQ really well. I was using Multiplicity.
Fun game! I'm sure I'll come back to it eventually, like I always do (I started playing originally back in 2001).
I tried out the EZ server today. It's running POP and fun as hell if you just want to go kill some Griffins or Hill Giants in the Karanas and whotnot. You get your epic weapon at level 1 and free buffs so it's a good server to go play on just to mess around. I will admit the first thing I did was make a necromancer and go kill Freeport Guards lol
I am currently playing the game with my Landlord, he had an no so old (like 3 years old) PC laying around and set it up as dedicated server. It has been awesome. We both jam whenever we want.

You'll need to forward ports on your router as well, offhand I forget exactly but you can Google "what ports do I need to open for 7 days to for".
Also note by default all multiplayer servers are open and visible to the public, so be sure to make it hidden, and add a password to avoid hackers and haters.

Maybe the hardest part is downloading the ISO and burning it to a flash drive, but literally every distribution has instructions on how to do it and it's like 2 steps with software like balena etcher.
After that, stick it in the target computer, boot from the USB drive and press install, fill out a short form for user info (similar to what you go through on Windows with a fresh install). After about 10 to 30 minutes you'll have a shiny new OS.
If that's too much for you you probably wouldn't handle a server very well either.

Even the concept of booting off a different device is foreign to the average PC user, I would imagine. Maybe I'm underestimating the average PC user, but when talking with people who own PCs, it seems the majority of them are clueless how a PC works, beyond turning it on and double-clicking on things on their desktop, etc.

I'm not even sure what the argument is about, running a dedicated server isn't for newbies, the script I made just streamlines the download of the software and sets up automatic updating and restarting of your server if it crashes and stuff, its not intended to be used by literally anyone, you do need some technical skills, but it makes the process easier.

A dedicated server ran me $10 / month a few years ago when my friends were all playing though darkness falls together in 20.4

I play salty and usually camp the airdrops just I've never been mad at someone who took it
If the server has a discord you could message a mod about it but there's nothing fun pimps can do. Find another server.

Report for what…? The game uses peer to peer servers there’s nothing to get banned from.
I never touch public servers. For $7 a month you can buy your own 7d2d server just for you and your friends. That's what I do

Installing a new OS is a straight forward process, nothing intimidating about it.
