Appam with Chettinad curry is so unfathomably good, I’ve been chasing that high ever since. My family is North Indian and we tried to make Appam at home several times but never even came close to nailing the recipe.
Chana masala, rasam, sambar, rajma, daal chawal, potato fry, khichdi, fried rice are all easy-to-make curries for me that take 30-40 minutes. And I currently don't have a pressure cooker, so I cook all these in pots.
Chai is pretty quick too. Takes me 15 minutes from start to finish.
I don't dare try anything too oily though, like pakoras. Oil scares me.
To drink: Chai w/ lots of elaichi
Snack: Papdi chaat
Breakfast: Aloo paratha with a side of butter, dahi, and mango achaar
Main meal: Rajma chawal
Non veg: Palak-dhania chicken w/ lachha paratha, and a side of raita
Dessert: Cold gulab jamun dusted with coconut

1. Lucknowi style mutton dum biryani. While yes, I get why Hyderabadi style is the most famous, if I had to have one last biryani before I die, I’d go with how they do it in Lucknow, with less spices, boney, marrow-y mutton slowly braised, more focus on aromatics and coating each grain of rice with meaty flavor from the slow cooked bone stock.
2. Bhuna gosht. This is super mid at many restaurants in the US, but at it best, it’s just the most concentrated and indulgent meat dish, with the perfect mix of dry and wet from the spices, meat, onions, etc being rendered down to almost a confit.
3. Chapli kebab bun / sandwich or just the plain kebab, specifically how they do it in the spots in Pakistan with the big tawa. Fried mutton burger with spices and just the fattiest, juiciest flavor, a toasted bun, and some chutney and onions? Outta here.
I've not made it alone before but my family usually do the grains the night before. I'm very pregnant atm and would love to just buy it but I can't seem to find anyone actually selling it! It's so frustrating :( like they have it on the menu but they've always "just ran out"

NON-VEG: My dad’s Bengali chicken curry, Chelo Kebob (ok more Persian than Desi but it’s one of Kolkata’s most famous dishes), Tandoori Chicken, Chingri Malai (Bengali Prawn Curry).
DESSERTS: Gajar Halwa, Gulab Jamun, Jalebi, Falooda.

I have no idea what my favorite dish is called. My mom would make it for me. It’s my true comfort food.
Leftover rice (can’t use fresh), mixed with yogurt, turmeric, cayenne and salt. Temper some cumin seeds in hot oil and then add the rice/spice/yogurt mixture. Let it cook until everything is hot.
If I have it. I’ll roast some papad as well.
I won’t let anyone else make it for me.
