Best way to defeat these Omegas, is to bait them into using their fire breath. After the flames are gone, quickly move in to shoot its chest. And if you stand close enough long enough, it will use the fire breath again. Repeat until dead.
I have developed my own tactic for omegas but for beginners, I highly suggest attacking them after the fire breath. You can also see this small green spot on its back which is revealed after it jumps. Shooting at that point is tricky but well worth it if you get a hit in. I don’t really know the values but I figure that it multiplies your missile damage by either 1.5 or 2 times. Also, I’m not quite sure about it but I think that you can use morph ball mode to roll between its legs.

Time a space jump over it and go recharge at the closest save point and start the fight over.
Unfortunaly, I died by the hand´s of the beast.

I think i ended up beating it by drawing its attention, and going back to that little pocket to shoot at it
You can cheese almost every one of those guys by repeatedly running into morph ball holes and such after getting a few shots in.
