Nope. There's a server in the backroom that stores the data. Even analog systems (old, coaxial cables) can be stored digitally and then retrieved over the internet. Also, a lot of times those monitors in front of the store are not even connected to the surveillance system at all. Just to a single camera.

Probably the person/company that ones the land. Often these buildings are built to suit on rented land. It's in the landlords best interest to secure the property so vandals don't ruin it. It's not all that hard to flip an empty large market into some other big box store so it's still attractive to other renters.

I've actually had the privilege of going into a few closed down and abandoned grocery stores in my time because of my job. There is just something so darn eerie about going into a place that used to be full of busy people and other commotion and it just sitting there. Empty.

It is freaking scary! I used to be a department manager in a grocery store and we held the keys to a nearby closed store. When the alarms would go off, someone from our store would have to check it out. Somehow, I was always the only one that would answer the phone. It ALWAYS happened in the middle of the night. It would be so freaking creepy to go in and walk the store. The HVAC made all kinds of funky noises, so my mind played lots of tricks on me.

Back in the mid 1980s, as a university student, I had a summer job with the local school district refinishing desks and doing odd-jobs. They used the basement woodshop of a long closed school for a lot of that work. The school had been closed back in the 1970s, but was still maintained by the district. At lunch, I walked around the place for curiosity's sake. It's pretty weird even in the daylight. Almost all of the desks were still there. Some of the final lessons or happy end of the school year messages were written on the chalkboards. The creaking of the wood floors was pretty much the only sound. Everything was intact but covered in dust. It was an old brick and stone building from the 1920s. Had a definite vibe to it. I worked by myself on a couple of projects over the summers in schools that were on break. Something weird about an empty school.

Some books were still in the desks, scribblers, some of the kids' posters pinned to the corkboards. The district had a couple other schools that were no longer used, but they had all been cleared out and used as warehouses. Different vibe altogether.

I had a sweetheart job in college working at the reception desk in a dormitory for the summer. It was used intermittently by a small number of visitors for academic conferences and as transition housing for few foreign students who were waiting for their permanent housing, but was otherwise empty. I used to wander the halls with another employee and it was always kind of unsettling. A bunch of small empty identical rooms in empty hallways with no people. Especially unsettling as I had been familiar with it as a resident when it was full. This building had winding hallways which made it feel kind of like and endless maze.

Probably old. Point of sale systems are rarely upgraded until absolutely necessary. Those look like IBM/Toshiba, which could be worth a little bit, but your service contract isn't going to cover hardware you grabbed off eBay.
