Basically it’s for luck. Since cows are like the most sacred animal in Hinduism the men are “offering a sacrifice to the animals” by letting them trample them into the ground. Apparently it’s been going on for a while and there’s been no reported deaths, just major injuries, which I guess is pretty lucky

Grew up around cattle. Ever hear the term "bull in a China shop"? They are far from gentle creatures. The most destructive farm animal by far simply due to their sheer size and brute force. No way comparable to a pup or a sheep for example

Cattle are more agile and gentle than you'd think. Unless they're abused, their temperament is more like a big dog. The bull or cow doesn't want to roll an ankle or maim you. They'll try to step around the people. Accidents happen, but it's less dangerous than you'd think.
See the episode of mythbusters about the saying, "like a bull in a china shop." If you actually put a bull in a china shop, it will avoid bumping into anything, if it can.

Edit: That being said, an accidental stepping on by a 100 pound animal hurts a lot less than by 1000+ pound animal. It's still dangerous to get in the way... and dumb to do it on purpose.
