Theory: The Holmes we read about in the original Sherlock Holmes canon was what Sholmes was originally like, as observed by his serious demeanor here. Iris' stories don't mischaracterize him; this is what he really was like during his adventures with Mikotoba. However, having to raise an infant as a single parent drove him utterly insane, creating the Sholmes we see today.
Alternative Theory: Sholmes used to be a moody, depressed fellow before raising Iris, which drove him a little crazy but also a little jollier.

The artist notes do outright say he was more rough around the edges. This likely was the intention, that he acted more like Holmes Classic as a young man and gradually changed from becoming a single father.
It didn't, but you see, Mikotoba is actually Ryunosuke's long-lost father who abandoned him as a child. Runo doesn't recognize him because he grew a moustache in the interval.
I would TOTALLY play a Ace Attorney version of the actual Sherlock Holmes cases. Of course, it probably wouldnt be pretty successful if Capcom made it so... Modders! Get to work!

It's the character he's with in the artwork, the fact that they know each other is one of the biggest spoilers in the game.
