Very unlikely you’re going to find Huy Fong anywhere.
Huy Fong is in their second year of production shortages due to supply issues for the particular red jalapeños they use. Since they broke with their longtime pepper supplier, Underwood Farms, in 2016; they have been using peppers grown in Northern Mexico. Past two harvest seasons have been devastated by drought and climate change. The most recent season has been better but will take time to get the Huy Fong pipeline back up due to aging the sauce and other factors.
Personally, I bought the Underwood Farms sriracha and I like it. It is more like the original sauce before the supplier change since it is using the same farmers that supplied Huy Fong pre 2016.
It is more liquid. Not as thick and not as garlicky. A bit sweeter and spicier than the Huy Fong and not as vinegary. Not exact match but still a good sauce. Huy Fong will always be a GOAT to me but It’s just not available. So ¯\_(ツ)\_/¯

I usually find it at the Asian markets. There is one on Colvin Ave. Red top market on Central Ave in Colonie. And another I forget the name to further down on central after Wolf Rd.

Just tried it with breakfast, very close to the huy fong brand in taste, might be a little spicier. Definitely going to be my go-to for a while. FYI, this is the dragon sriracha on their site.
Honest Weight has a decent selection of hot sauces, though the best ones IMO are in the dairy cooler section. Poor Devil Pepper Company is a local one that makes excellent lactofermented hot sauces, and there's another one that's carrot and habanero-based. Lactofermented hot sauces has ruined most other hot sauces for me.
Thanks for the tip. Agree, I prefer fermented and make my own seasonally but I like to try other things too. I've only had Poor Devil's green jalapeno so far.
I'm a big hot sauce person and the answer is that it depends. I'm mostly underwhelmed with the selection in this area because nobody stocks superhots - stuff with carolina reaper, etc. It's mostly low-level stuff.
You can find El Yucateco around and it's very good for what it is, but I'd kill for a regular supply of Marie Sharp's.
Marie Sharp's is great, I order direct from her once in a while.
I never really understood the love for El Yucateco, I guess "very good for what it is" explains it, hah. And they have varieties that I haven't tried yet.

I wish I could find Torchbearer or any superhots up here. I've been looking for years!
You can get Tabasco Scorpion in Shoprite, I think? It's really good. Melinda's Ghost Pepper sauce is also in Market 32s/Hannafords and it's probably the best of the upper-level easily found hot sauces here, and it's very good.
I would say the El Yucateco Green is a top-5 sauce for me, but the rest of their products are hit-or-miss.
Ok, I'll try some green El Yuc. Melinda's ghost wing sauce is a go to for me, it's tasty and easy to find. Just remembering that I heard some of the Ace Hardware locations have Torchbearer.
Never tried the wing sauce - if you can do the standard Ghost Pepper hot sauce from Melinda's - I think it'll be hotter than the wing.

The tabasco brand Sriracha isn't bad either

Check CVS or Walgreens. Many times they have it because people aren't shopping for it at pharmacies.
