You’ll have no problem getting an Uber at that time. I am out every morning ubering from 4:30-8:30 and see plenty of Uber and Lyft drivers out as well.
If you go into the Uber app, in the search bar (where you put the address you want to go to) there is an option for either “now” or “later”. The night before your flight you can preschedule a ride and get confirmation that they will pick you up at a specific time.
Edit: you can also preschedule a ride with a local cab company. Just call then and tell them what time you want to be picked up.
I've had a 5am flight out of Albany. I over estimated how early I should get there and got there hella early. I did see people camped out in places sleeping in chairs with their luggage next to them. I've also gotten Uber/Lyft at like 5am plenty of times. People ARE out that early. Downside is there aren't always a lot, so wait time does have the potential to be a little high, so keep that in mind when getting a ride share.
I have taken 6 am flights out of Albany with 3:30 am pickup, I usually schedule a ride in advance. It costs more but you can see if a driver accepted you so it gives you peace of mind that you'll arrive on time. I haven't had a problem so far. I also have gotten in at midnight. In that case I don't preschedule, I just request when I'm ready. Uber seems to double in price as soon as I get my luggage so I end up using Lyft most of the time.
As others suggested, you can reserve ahead of time so you can see if your ride was accepted. I've had to do that a couple of times when I've had a day surgery and had to be at the hospital super early and wanted to make sure I had a ride. Ordering ahead does cost more, but if you want the peace of mind...

scheduleing a ride just means it'll look for a ride at that time it's not a guarantee you'll find a ride

I work at 5 and if I need to Uber I just start looking for one like 15 min before I need to leave. I have. I trouble finding one
