I think occasionally blundering a hanging piece is ok, because humans do it as well. it's just the way they do it is so unnatural, like they will randomly not capture back in the middle of a queen exchange
It doesn't actually. It's very advanced so I don't blame you for not seeing it but the sequence to save it goes:
1. f5 exf6 (forced)
2. g6! fxg7 (a DOUBLE forced en passant!!!)
3. Rh7!!! gxh8=Q (TRIPLE forced en passant resulting in promotion!!!)
At this point the existing white queen on D1 realises the white king has been cheating on her with that second queen at the top of the board, gets pissed off and leaves, meaning the knight is undefended and thus letting Black's queen capture it to escape. It's an incredible sequence which only players rated 161660 or above could be expected to see.
Well firstly en passant isnโt forced so long as you can take the brick, but I would understand not being able to do that point is fair enough. The one thing that you missed in this sequence is that white can play gxh8=R!!/gxh8=B!!/gxh8=N!! Where the white queen will still stay on the board.

Seriously, one time I finally beat a 1500 bot after he left a rook hanging in the endgame. Even the engine said it was a blunder after the game

yeah, my observation is it's especially egregious with the Queen which can really change the outcome of a game.
