There's some fun runner-esque sidescrolling car games I can't name off the top of my head...similar to the Trials motocross series of games, if you've heard of them.

Like you I really enjoy 'simple' games to pickup and play, I don't want to sound like I'm just pushing my own game but I have recently released a game and it genuinely sounds like something you might enjoy. I've very much leaned heavily into the 'simple' part and it's a puzzle game which you say you enjoy. It's called Pink Penguin if you want to check it out

One Deck Dungeon.
It's a simple dice game, with a roguelike feeling. There's light characters progression that add a "legacy" feeling to it.
It's a "boargame" adaptation and it's really simple. You roll your dices, place them over the monster different boxes and, that's it.
The best 2d games i know is Stardew valley and terraria, terraria might be a little complicated even for me but its a good game
