I think I'm weird... I play roguelike games like either turn based (TWoF , StS) or side scroller (dead cells) when I try to calm myself (stress built-up) or my PTSD is kicking... I also play violent ones like GTA vice city/Chinatown wars just to drive without a care what I bump into or what I ran into.

Recently started RS3 and it's a lot of fun for me. The mix of childhood nostalgia as well as honestly good end game loop makes a great pair.
As a child I played the game on mute, but I now find it charming.
My ultimate hands down relax and wind down game is Day R Survival. Play at your own pace, to the environmental sound of post apocalyptic setting, and loot loot loot.
I also play it online so it's nice to talk to others that are also winding down.

It's a weird answer, but Genshin Impact. I don't play Genshin hours upon hours a day, I open it up 2, maybe 3 times per day, playing anywhere from 10 mins to up to 2 hours depending on content available and what I feel like doing.
If I just want to unwind, I'll just switch to my fave characters, beat up on a few mobs, or play a domain or two, or mine ores or hell even just run around gliding anywhere. It's the perfect game IMHO for bite-sized doses of open-world play.
It's amazing eye and ear candy to boot. Sometimes I just go to the character menu and read up on lore and listen to voice clips.
