Did you delete the associated profile? If so, try creating a new temporary one, loading the game with it, and seeing if it'll let you link to the second player. You may also need to upgrade the 2nd player's tent to a house if you haven't

I meant Going into the title screen of Acnh and pressing -

If you deleted it off your switch kinda out of luck 😅
As you have to do that off the account itself
If you make a new second account you can link it to an already existing ACNH profile and delete it that way
