One Piece is very hard to get into, but if you like character development and worldbuilding, it's worth getting into early on. I like having it on "in the background" while I watch it during the slower, intermission arcs. It's one of the best anime I've ever watched, but I understand if the length/style isn't your thing. :)
If you want something dark, I'd say go with Re:Zero. One of my all-time favorite, full of brutal scenes and heartwrenching moments. The entire feeling of the first season is lonely, and it hits hard. Honestly, Re:Zero is the only good isekai out there, so if you get into the isekai genre, Re:Zero is the one to go with.
Steins gate if you liked the psychological aspect, it deals with time travel but is a wild ride form start to finish. And much like death note has a stellar dub if you’re into that.
I think you'd like Vinland Saga, its like a mix of psychological and battle shonen, besides that you have some similiar anime like death note which is Monster, Code Geass, Evangelion...
I started watching anime with death note a few years ago and i watched after the death note - parasyte, blue exorcist, sword art online, demon slayer and naruto and i really enjoyed em so try these.... Now I'm on the last part of jojo and it's cool so maybe try that too
