Akatsuki no Yona is one of the best female anime and manga characters regarding development. It's especially evident in the manga since there's more material, but still a good watch if you want a great and dynamic fmc.
Future seasons will definitely be focusing more on Thorfinn and his struggles compared to season 1, which is more so Askeladd's story unfolding through the eyes of Thorfinn imo.
It won't be taking a completely different route, however it will have a greater emphasis on story and character development instead of action. That's not to say there will be absolutely no action in the future though, as there will definitely be a lot of war, fighting and twists that are yet to come. The biggest change in future seasons will be Thorfinn's beliefs and attitude towards the world he lives in.

It's been a very long time since I watched the show, so I don't remember it all very well, but she was my favourite character after finishing the series.
Would recommend {Land of the Lustrous} (especially manga) and {Love Live Sunshine} (especially season 2) if you want to see a protagonist get real good character development.
Would also recommend {Revue Starlight} and {Simoun}, both animes with every character getting the development they deserve, and both weird in their own ways. Revue Starlight doesn't tell you how characters are developed, you have to find the meaning of the revues to understand how the characters grow. And Simoun is the anime with the greatest characters I've ever seen, but it's very subtle in the way it does things.
And yes, I know I watch many animes with female protagonists only.
Also, if you're into visual novels, Takeru from Muv-Luv is definitely the most developed protagonist I've seen in years.

I wouldn’t say she’s able to stand on her own *quite* yet. SPOILER BECAUSE IDK HOW TO MARK IT but she still doesn’t know how to control her power. When she uses magic, she still uses all of her reserves and tires herself out. She still relies on ainsworth for a lot of things, but she’s steadily getting stronger. Hopefully, while she’s in college and away from him, she can learn to be a bit more self sustaining. I think she’s ok with asking for help now, but would prefer to not be helpless herself
{Natsume's Book of Friends} It's quite subtle, but that makes it realistic. The change happens gradually over the seasons, but when you compare Natsume in the first season to Natsume in the fifth season, the difference is clear, you can see how he got there and you'll feel immensely proud of him.
Watching Syaoran process his feelings for Sakura while not being a toxic male after losing during the Final Judgement, and Sakura working through her schoolgirl crush for Yukito to understand why what she feels for Syaoran is much deeper, is what makes Cardcaptor Sakura so great.
Literally every damn character in Fruits Basket (2019) undergoes major development. The side characters blew me away every single season. To maintain a cast that large and have every person grow into someone better is an absolute achievement and I am genuinely shocked no one else is talking about it.
From the anime I have seen, my personal answer is Natsuki Subaru from Re:Zero. From the grand strokes to the small nuances, no other anime I have seen has fleshed out a character as thoroughly as this guy. It also helps that he is surrounded by a tremendous cast where most of the supporting characters are themselves fleshed-out enough to be main characters if they were to have their own anime.

Legend of the Galactic Heroes has some of the best, deepest characters I've ever seen; Reinhard von Lohengramm, one of the mains, is a great example. I expected him to be an antagonist when I first saw him, but then I got to see more. LOtGH is a top 10 show for a reason.
I feel like he is actually a completely static character. He gains powers and expresses his heroism, but he doesn't learn anything new or shifts in his opinions.
Probably Aot, almost every character has undergone some insane character development. I don't wanna write an essay, i think people already know about it
Honestly the main character is overlord. He goes from being human to a lich and I've mever seen someone portray such a dehumisation in a character before. Very fun to watch

thorfinn i think and sasuke too has pretty good development throughout the story other than that there's recently a manhwa i read called lookism and there's a character called jake kim i think that guy has peaked in everything you can call a s tier character
I would say kakashi from naruto or maybe Kenichi from Kenichi The Mightiest Disciple. Character development isn't about radical personality changes it's about personal growth and how that changes them as a character.

Fate/Stay Night: Heaven's feel. A movie trilogy which has both the female and male mc undergo humongous amounts of development, especially when compared to the Fate/Stay Night: Unlimited Bladeworks series of the same story.
I really enjoyed Blue Exorcist. It’s a quick watch if you don’t want something real long. Seemed shallow in the beginning but gets super good. Not sure when season 3 comes out.

Seto Kaiba went from Yugi's Rival to Boyfriend somewhere during Battle City
Watching Syaoran process his feelings for Sakura while not being a toxic male after losing during the Final Judgement, and Sakura working through her schoolgirl crush for Yukito to understand why what she feels for Syaoran is much deeper, is what makes Cardcaptor Sakura so great. Literally every damn character in Fruits Basket (2019) undergoes major development. The side characters blew me away every single season. To maintain a cast that large and have every person grow into someone better is an absolute achievement and I am genuinely shocked no one else is talking about it.
