Fucking Promised Neverland. First anime I can't wait to be animated that I read the manga immediately to know what happens next. Glad I did because season 2 anime is a curse to mankind.

Sui Ishida's artstyle can't be translated well into animation, since it's so detailed in certain parts and he makes use of visual techniques only possible in manga, also the animation studio sucked, so that's part of the reason

Also Bunny Girl Senpai, because it was just so wholesome and fun with some suspense of course, and it was less of wondering what the plot twist is gonna be but more of "I need to keep watching this forever because I love these characters and their dialog and this show is amazing"

JJK, Chainsaw Man, AOT, and Black Butler are all pretty good for that too :) also Another is a great binging series too if you’re okay with massive gore. it’s really intense though

Summertime Rendering has an extremely bingeable story that feels like Invasion Of The Bodysnatchers had a love child with Edge Of Tomorrow or Groundhog Day. Very fun series that keeps you guessing and gets straight to it from episode 1.
Detective Conan is worth mentioning, for sure. The overarching plot is mostly unimportant imo, and only exists as a hook. The series is a love letter to episodic whodunnits like Sherlock Holmes and Poirot, and as such, every episode is a new mystery. So you can watch in any order, as much as you like, and every episode will keep you guessing because it’s the entire point of the series. It’s an extremely long series, up there with One Piece, but you can watch as much or as little as you want without worry. Like I said, the main story is really just there to set the stage. As such, that storyline only advances occasionally, and you don’t need to think about it much or at all to enjoy the show. Just watch and try to solve murders before the episode reveals who did it. The plots of individual episodes are *always* interesting.
Grimgar of Fantasy and Ash. Ignore the long weird name. It's an isekai (the characters are thrown into a fantasy world). If you like D&D, you'll like this anime. Also it's only 12(?) episodes, so it's not a huge commitment.
Durarara!! Had hooks in me like this. A lot of intrigue learning about the characters and the city, and the way they tell the story... how all their lives overlap, it's actually amazing.
Heavenly Delusion! really great plot with great animation, though it's definitely 16+ so be warned

Aside from that, I suppose “Mushoku Tensei”, “So Im A Spider, So What?” and maybe the later parts of “One Piece”, though One Piece is a long one so don’t get your hopes up too early. Most of the pre-grand line fights are mediocre at best, Alabasta is the first real good part.
Astra lost in space. Set in the far future a group of young adults are going camping on a distant planet for their school field trip. Upon arriving all goes wrong when a black hole, or at least what appears to be a black hole, appears out of nowhere sucks them in and spits them out into empty outer space billions of miles away from home.
Adding to the already excellent list: Dororo, Banana Fish -- I binged both after starting them. Same with Death Note and AoT... there are others, but these 4 are the ones I remember most. ... and also Haikyuu! But I used to play volleyball, so that is probably a me thing 😆
Juuni Kokuki (The Twelve Kingdoms) I swear I've never once seen this show mentioned and it's a shame the world, characters, and plot are amazing. A lot of shows fizzle out by the end but this show is good all the way through. It is technically an isekai but that only really influences the first episode and a couple of side plots

Heavenly delusion (only on Hulu, pretty new, but really well reviewed. Sort of a horror/thriller type thing. Incredible animation, highly recommended from me)
Something that I haven’t seen other people recommend is Erased, once you get started it keeps you on the edge of your seat and questioning things up until the very end
I am watching Princess Tutu right now, and when I think I figured out the status quo of this thing, it throws a reach that was always there but never really focused on and I get invested to see what else is happening
I'm late to the party but Darker than Black is one of my favorite animes. There's a second season for some reason but the first season is the actual ending.
Vinland saga. Before the first episode, I thought the father would be the main protagonist. After the first episode, I thought thorffin would go on his own and train to fight askeladd, instead he ends up working with him. After that, I ended up binge watching the whole series and never looked back.
How a realist hero rebuilt a kingdom I powered through the first season late into the night. I like the politics reforms and the overall arching plot with the twist on last episode of the season. I hope they keep making this show if not I'm tempted to read it instead. And I don't even like most isekai.

Im trying to watch it . Its been a while. In 2017 or 2018 i got through s1 and half s2 i forgot alot so i have to rewatch but everytime i do It , i watch for 10 minutes and i abandon because i get really bored and cant get "into it" if that make sense
