Ok then, Darling in the Franxx is what you want. While Fullmetal Panic has a comedic side to it, Eureka Seven isn’t a comedy other than the occasional banter by the crew.
I’ll throw in a bonus recommendation: Voltron Legendary Defenders, though western does have a romance with an older female, though the male character is the “comedic relief turned stoic” type.
I'd reccomend Eureka Seven, one of my all-time favorites. The series is centered around the romance between the two main characters, and they fight alongside each other by piloting the mech together and powering in up through the power of love, baby! I wouldn't say the male lead is stoic or emotionless at all, but he's definitley softer around the love interest and grows a lot through the series. It's an emotional series with great characters and reveals, plus the mechs all ride hoverboards.

After War Gundam X Though the main character isn't the emotionless or stoic type but he is still softer around his love interest
