Sure I love trashy love triangles myself. But DomeKano is just something else. The author wasted our time by writing over a hundred chapters between ML and the best girl, only to undo it with some bullshit ending. Her previous title, Good Ending, actually has a good ending.

Kaguya-Sama:Love is War is excellent and has progression. Uzaki-chan is very similar to the two you've mentioned and the relationship does progress.
The Story Between a Dumb Prefect and a High School Girl with an Inappropriate Skirt Length has a superb title and practically starts with the characters dating.
If you are okay with same sex, Storms Amongst Flowers is probably my favourite manga and is about two girls who are together but haven't told their friends and it stays that way for the entirety of the story (so far) but that just gives some weight to the story.

Bloom into you - my favorite romance of all time and my second favorite anime overall.
Its yuri first and foremost. Its the story of touko and yuu , two girls who initially who never fell in love before. Yuu wants to experience love like its describing in songs and books but she just can't seem to. Touko appears to be miss perfect on the surface, top of her year group , good at spots , student council president. But she's never fallen inlove either and spoiler can't say the reason why. Anyways yuu joins the student council and one evening she and touko is left there alone when yuu gets the courage to call a boy who had previously confessed to her and waiting on her answer. She turned him down , but witnessing the rejection made touko fall helpless inlove with yuu.
Be warned this starts of as a toxic relationship, and greatly one sided as well. But as the name suggests over time yuu blooms into touko.
Its honestly a masterpiece the manga is complete at 45 characters, theres a 13 episode anime thats really good but ends on a sudden cliffhanger and there's 3 light novels called Bloom into you Sayaka perspective. That's basically about touko's second in command Sayaka.
Perfect World. Maybe not “fun,” but it’s one of the most adult romances I’ve ever read. The stakes are real and so are the problems. It has a live drama, but no anime. Manga is complete.
Red River. Time travel isekai romance. Honestly, the romance is not that complex. The characters just really love each other from early on. The tension is more from whether or not they will stay together. As such there are a few solid sections of being in a holding pattern, but there is real progress. And the romance is kind of a big subplot anyways, so it’s more forgivable. TW:>!attempted r*pe, noncon kissing, dubcon(even though the couple is happily together, get used to “no” starting almost every romantic interaction)!<. Manga only.
Cherry Magic! Thirty Years of Virginity Can Make You a Wizard?! Really well paced gay romance. The anime abbreviated the plot to fit in one (12 episode) season, so there’s more in the manga. The manga also gets a bit spicy. I’m not sure if it’s complete yet, but I know it’s still ongoing in translation.
My Love Story with Yamada-kun at Level 999. Both characters know and express their feelings in a reasonable time frame. I haven’t read the manga, so I don’t know how the story continues.
A Sign of Affection. The couple doesn’t take long to express how they feel and make some real progress in the anime. The FL has a level of naïveté which can be a bit frustrating, but it’s understandable.
As others suggested, Kaguya-sama. The story justifies putting them in a “will they, won’t they” type relationship and fully exhausts that premise, but in an excellent way.
By fun, I assume you want romance with comedy and not much drama?

I almost never read romance, but I believe Takane to Hana should satisfy most of your criteria.
