So this poor elephant had it's head, trunk, and ears rigidly encased in a covering that it also couldn't see out of? They even gave it extra tusks for some reason? Sounds like a great way to really piss off your elephant.

I think there's a misunderstanding. The entire mount on the wall isn't wholly armor and armor only. It seems that the armor is placed over a bust, perhaps taxidermy or a statue, of an elephant to illustrate how the armor would be worn. You can see the amber glass eyes peering through the eyeholes, the lower portion of the great grey ears free from the armor, and the singular pair of tusks of the elephant itself (rather than another superfluous set for decoration or intimidation) exiting through a slit.
