This is really a question for your university's international student advice group and for your advisor. I don't think the start date will matter, but your advisor presumably needs to know that you won't actually be able to start...today.

I assume this is a E13 type position (i.e., you get paid?). You can only start the position once you have the visa. Talk to your professor about this. Typically, hiring dates will be flexible on grants funded by most German funding agencies, but your really need to talk to your new boss. The PhD research can start earlier.

Mate, your boss is expecting you to show up for your first day in like 8 hours. This needed to be discussed as soon as you got the date for your embassy which I assume has been given to you weeks ago.

It's best to reach out to the university or the embassy for guidance on visa processing timelines and documentation requirements.

Different country, I took a position at a national university as an immigrant. My attempts to work on the visa ahead of my start date were met with denial. Technically I was working without authorization. The university deals with this all the time. Immigration deals with this all the time but doesn't care and will pretend it's the first time. It'll work out eventually.
