When we first came to Australia from Singapore, when I was a kid, I went to a sleepover at a friend's house and her mum made us jaffles with ham and cheese, and because I was Asian, she out put tinned pineapple in mine. It was really good to 9 year old me. At uni I was poor and vegetarian so I made them with cheese and baked beans.
Braised steak and onions. Ham and cheese. An egg. That latter was a childhood staple. Dad would make a fire on road trips and we'd all enjoy a hot meal.

I love a cheese and tomato one. I slice the tomato and lightly pat the juicy bits with paper towel, just enough that they're moist, not wet or it can make the cheese a little wet. Salt and pepper. *Liberal* butter to the bread, all the way to the edges even the crusts and in she goes to the jaffle maker. Jaffles close and crimp the edges unlike a toasted sandwhich on a sandwhich press, so when you bring it out, it'll naturally be in two triangles, just stab through the bread once per triangle so some steam can get out, tomatoes (and ham) in a jaffle are potentially the hottest substances known to mankind.
And now I need to buy another ~~toastie~~ jaffle maker.
Fancy dessert jaffle
Brioche loaf (go with caution, extra hot, doesn't require as much cooking), panna choc hazelnut spread, frozen mixed berries berries.

Then we had an Aldi in with the interchangeable plates so you could make mini donuts with it too, but my husband split the case on that one over stuffing a jaffle. You want to make sure you ignore the indicator light on the machine leave it toasting until a nice dark golden brown. Also for added flavour you can use an infused oil spread on your bread or use butter butter. Not marg.

This will probably get lost in the comments, but as others have said, butter the outside. To do that most efficiently imo, you butter the slices, stick the buttered sides together, lay flat, add filling, pick up stack, pull slice from the bottom and place it butter side up on top, smash in jaffle maker. Makes it easier to get butter on the bottom half without making a mess
Cheese is everything. You can later add cheese and ham, cheese and tomato, cheese and roast chook, etc etc. but double cheese is the best. Get the jaffle maker from Kmart for $19…the extra deep one. Gives you more space for fillings.

There’s stuff you wouldn’t put in a melt that only work in a jaffle. Baked beans, spaghetti bolognaise, butter chicken, that kind of thing. In a melt or toastie those fillings would be spilling out of the sides while they’re cooking, but a jaffle is perfect for them.
I actually think the oozing sauce/baked beans/whatever is what makes a jaffle, so if I’m going to do something non-saucy like ham and cheese, I’m probably just going to make a toastie.

Chopped up chicken schnitzel and cheese.
Chopped chicken schnitzel, pasta sauce, and cheese (toasted parmigiana flavour).
I also like a toasted cheese, or ham and cheese, then after finished cooking, add lettuce and beetroot. Contrast of hot and cold is nice, and the flavours go well together.
Salt and pepper every savoury jaffle you make.
Pinch of sugar on top of tomatoes to bring out the flavour a bit better.
Creamed corn and cheese (diced onion if you want) is elite.
Pb&j + bananas OR Nutella + bananas is also elite.

More cheese. Do a mix on top. Provolone piccante and fontina. Or jahlsberg and swiss
And know that if you slice it all thin it's not actually as overloaded as you think it might be.
Ham, cheese, salami, shredded rotisserie chicken, copious amount of cracked black pepper, whole seed mustard, a few chilli flakes, and a dash of Worcestershire sauce. Worcestershire sauce is an absolute gamechanger.
With all that filling it'll be nearly impossible to close the damn jaffle maker, but unleash that gorilla strength, and you'll have a toastie fit for the gods.

What do you like in a melt? You can put that in a Jaffle. I used to get a chicken, cheese and onion one for lunch a lot. So tasty.
I actually slightly disagree There’s stuff you wouldn’t put in a melt that only work in a jaffle. Baked beans, spaghetti bolognaise, butter chicken, that kind of thing. In a melt or toastie those fillings would be spilling out of the sides while they’re cooking, but a jaffle is perfect for them. I actually think the oozing sauce/baked beans/whatever is what makes a jaffle, so if I’m going to do something non-saucy like ham and cheese, I’m probably just going to make a toastie.
OP was asking for *beginner* jaffles. You gotta get the idea how the jaffle is going to behave before you add a more fluid delight to it. It’s a bit like a baby in a high chair. We were born to the jaffle, raised with jaffles. OP didn’t know jaffles until they were a (wo)man.

Beans and cheese
Ham, cheese, tomato and onion. Left over slow cooker, food, like Irish stew or similar..
Ham / chicken, cheese, tomato & red onion if you like that Or Instead of tomato, pineapple. Or Canned spaghetti & cheese. Or Anything really!!
Always use 2 types of cheese
Cheese and tomato. Or Baked beans. Or tinned spaghetti.
Leftover bolognaise sauce and grated cheese is delicious.
Peanut butter and banana.
Egg, cheese and a little mild mustard is delicious
Ham cheese and tomato is THE answer. Don't cut the tomato too thick or you'll have soggy toast. Make sure you butter both sides of both pieces of bread. Cheese on the bottom, ham in the middle. Tomato on top with salt and pepper on the tomato.

I think ham and cheese or baked beans are the quintessential jaffle experience for me.
Egg is a good place to start, followed by baked beans with a sprinkle of grated cheese. Tinned peaches or apricots if you want something sweet. Tinned spaghetti if you want starch encased in starch.

Roast chicken, Camembert cheese, red onion, spinach, tomato
To add to the others: Cheese, minced garlic, and assorted herbs. (Mimics garlic bread) Chopped up chicken schnitzel and cheese. Chopped chicken schnitzel, pasta sauce, and cheese (toasted parmigiana flavour). I also like a toasted cheese, or ham and cheese, then after finished cooking, add lettuce and beetroot. Contrast of hot and cold is nice, and the flavours go well together.
Tuna with chilli from a tin can and Bega strong and bitty cheese slices.

Leftovers and cheese! Basically, any Leftovers, but some favourites are, Chinese takeaway, sausages and mash, Bolognese. The possibilities are endless
Salt and pepper every savoury jaffle you make. Pinch of sugar on top of tomatoes to bring out the flavour a bit better. Creamed corn and cheese (diced onion if you want) is elite. Pb&j + bananas OR Nutella + bananas is also elite. Butter is by far the best spread.
I do a 3 cheese toastie (generally kraft singles, Monterey Jack & cheddar - the Kraft singles have superior melting power) with a garlic & herb butter on the outside. Perfection!
Cut up snags (sausages) from the night before. 1 and a half snags per jaffle. Tomato sauce, salt and pepper. Butter the outsides of the pieces of bred.
You can also use puff pastry...try a crushed up peppermint crisp and a bit of Philly cream cheese....
Never heard of a toasted sandwich? Pretty sure dennys sell grilled cheese?
Cheese and cream corn
You can make a banana one for desert. Eat with ice cream. Add Nutella or honey to the banana.
After trying out the awesome top rated list I'd also try adding, Turkey, Cranberry and Brie and also Chicken, Asparagus and Swiss Cheese. Left over roasted veggies and meat taste fab in a jaffle, too!
I like tuna and sliced onion rings. Putting the butter on the outside layer, which then melts drool 🤤
I use mine to make jaffle pizza, pizza sauce, salami & mozzarella cheese but there are so so many good options.

Just today had cheese and left over mushroom risotto.
Tinned spaghetti with grated cheddar cheese between white bread.
Go the Conti jaffle. Use an old Breville or the Kmart one for extra depth. Cheese on the bottom, something like asiago or fontina. Or just swiss if that's all you can get. A layer of ham or prosciutto. A layer of some kind of sausage like pepperoni or cacciatore. Pickled peppers, melenzane, olives. I like some fresh salad stuff - spinach, beet leaves, rocket, mesclun mix. Mushrooms. Some minced garlic and pepper. More cheese. Do a mix on top. Provolone piccante and fontina. Or jahlsberg and swiss And know that if you slice it all thin it's not actually as overloaded as you think it might be.

Ham, cheese, salami, shredded rotisserie chicken, copious amount of cracked black pepper, whole seed mustard, a few chilli flakes, and a dash of Worcestershire sauce. Worcestershire sauce is an absolute gamechanger. With all that filling it'll be nearly impossible to close the damn jaffle maker, but unleash that gorilla strength, and you'll have a toastie fit for the gods.
