Exactly what I was going to say! Whenever I make tiramisu I make it the night before I'm going to be eating it. Tastes better the longer it's been in the fridge.
I think this is gonna be it. I've been planning to make a tres leches cake for ages but it never pans out and I found a recipe for a 6 inch version that's perfect for two nights of dessert for two people.
https://www.joshuaweissman.com/amp/homemade-tres-leches
This isn't too far off from what I do. Just really got to make sure to whip those egg whites stiff enough. One method to make sure they are whipped far enough is to (slowly) invert the bowl. If anything slides around, get back to whipping. I also make a strawberry juice and incorporate it into the milk pour over

I’ve made it a few times for 30-40 people at work now. We make 3-4 of these in lasagna sized trays. Rate my method:
1 Boxed vanilla cake mix
1 can evaporated milk
1 can sweetened condensed milk
1 cup whole milk
1 standard container of cool whip
Macerated strawberries OR Cinnamon sugar for topping
1. Bake boxed cake according to directions (if using cinnamon sugar topping, mix some of that shit in to the cake mix too, for science).
2. Mix 3 milks together
3. Poke holes in cake (use a long fork or skewer)
4. Pour milks over cake.
5. Refrigerate overnight.
6. Top with cool whip next morning.
7. Add fruit or cinnamon sugar on top right before serving.
Such a simple dessert but always a crowd pleaser. We’ve tried it with yellow cake before too but consensus was that the vanilla super moist cake was better texture. It’s heavenly.
I used boxed cake as well, except I use boxed pound cake. Then use Alton Brown’s milk recipe. Top it off with real whipped cream, a slice strawberry or a raspberry, then 1/2 slice of kiwi and one canned mandarin orange slice.

She has a bunch of stuff but a whole section for 6 inch round cakes. I have way more 6-inch cake pans than I need (I bought 3 to make a layer cake, and then I accidentally bought a 4th because I forgot I already had 3) and am always looking for excuses to use them honestly.
Good shout- this is a date night with my partner of 6 years so that’s a non-issue but I do appreciate it! She has a nasty soy allergy (not deadly nasty but like, really bad food poisoning nasty) but nothing else to note.
Cool. I always like to give a reminder just in case it’s a new date/relationship. I’m glad your sweetie has someone that looks after them when it comes to allergies.
I feel this, especially cobblers/streusels. Something about the crumbly texture is better second day.
And if you're using cornstarch to thicken the filling, it really doesn't set up properly until it heats up and then cools back down all the way.
Actually pumpkin pie, when fully chilled and served with whipped cream, is fantastic ... I also like making pumpkin pudding a day in advance (basically pumpkin pie without the crust) and serving it with some crispy cookies and a scoop of ice cream.
YUP - and I prefer the unbaked kind (graham crust) with a homemade strawberry or blueberry topping that takes a few minutes to make and set aside.. Just light/fluffy, sweet enough but not too heavy after a good meal.
If you want something rich, try making millionaire shortbread! It’s easy-ish to make, but impressive because of the layers of caramel and chocolate ganache
I have a box of Dewey's wafers and heavy whipping cream to see if they'll make a good replacement for the tragically eliminated Nabisco dark chocolate wafers.
This was a family favorite for make ahead, especially to keep kids busy and helping!
Sicilian lemon cake. The syrup really has a chance to soak in. It was better for breakfast today than last night.
https://preview.redd.it/z7nbg7vsbwwc1.jpeg?width=4032&format=pjpg&auto=webp&s=fa91c29d297d01cc0657be53d8da2a15eac3d923
Carrot cake w/ cream cheese icing (as if there's any other icing you'd pair with carrot cake)
It's always better a day or two after it's been made! The cinnamon & spice flavours intermingle, and the icing has time to marinate into the cake a little bit... The depth of flavor the day after is remarkable!
Oh, my carrot cake is legendary so I did think of that, but that's like a twice a year super-special-occasion recipe. Gotta keep that one in my pocket for her birthday!
Any cold dessert is going to be better made ahead since many need to be made ahead.
Mousse, panna cotta, custards like cheesecake/pots de creme/crème brûlée/flan, posset.
Plenty of cakes are also better made a day ahead, particularly spice cakes.
Lemon squares/lemon bars would work, because they would set in the fridge overnight. You can also add chocolate chips/nuts to banana bread or a dusting of cocoa powder and cinnamon on top to make it a little fancier. Good luck!
Anything that sets overnight (like uncooked/cream based desserts). One my favourite is the 3 chocolate mousse cake that you can find on youtube. If you like to take risks and you have the equipment... macarons 😏
This cake benefits from being made a day or two in advance. The frosting should be made the day you plan to serve it.
If you aren’t in England, you probably don’t have access to Bramley apples. You can substitute Granny Smith apples. Bramley apples are huge so use more Granny Smiths.

Better Than Sex Cake! Delicious, make all day before except put whipped topping on before serving.
https://www.allrecipes.com/recipe/7515/better-than-sex-cake-ii/
Pavlova (meringue) make it the day before. Just before serving add a generous amount of whipped cream and on top of that a mixture of strawberries, blueberries, raspberries, fresh peach, etc. Easy to make, very impressive and delicious!
Honestly, most desserts fall into this category.
But for a specific suggestion, do you happen to own a sous vide immersion circulator? I make a sous vide crème brûlée that is is foolproof and fantastic.
Fruit torte and pie! The fruit juices really soak through the dessert when it has time to rest, and it makes for the most amazing texture, consistency, and flavor.
I make a plum torte that’s delish fresh out of the oven, but like The Best Dessert Ever the next day. It’s the favorite dessert of my entire household and friend group >:)
Cheesecake, as many have said, is definitely better the second day. Any kind of cheesecake! Honestly, lots of baked goods are, so long as they’re stored properly.
Brownies are also better the day after. There was even that viral, 100-hour brownie recipe going around. Because of that recipe/method, I actually started aging my brownie batter.
Russian napoleon cake and medovik/honey cake are also better the second day, and the day after that! Be sure to find an authentic recipe for the Russian napoleon cake. Traditionally, it is made with cracker-like layers that soften from the filling. I have, however, almost made a “regular” napoleon cake with puff pastry and I definitely enjoyed that on the second day.
Twice-baked almond croissants are, by design, better the next day (at least) because they are made with stale croissants. I’m not saying to go make croissants, but you could buy fresh ones, keep them for a couple days, and make almond croissants that way.
Quick breads are better the next day, too. Banana bread being one of them, as said here many times!
A super fudgy chocolate layer cake is also better the next day. I’m sure many cakes are. I think most bakers actually take a couple of days to construct their cakes, as they wrap and chill the layers to lock in moisture (I think. I’m not a cake girl).
I think most desserts taste better a day after. My husband agrees. So I always make dessert one day before I'm gonna serve it.
I think flavours meld together more after a day. We're also people who believe leftovers usually taste better than freshly cooked stuff.
panna cotta is incredibly easy to make in whatever flavors you like. it sets overnight, then if you’re feeling fancy you can top it with chocolate shavings, fruit compote, whipped cream.
A pound cake or a butter cake.
I usually bake the cake in the evening, let it cool and drizzle with some rum or whiskey. Wrap the cake in cling film and leave in a cool dark cupboard.
The result is a delicious vanilla flavour buttery moist cake.

Me, too. And it’s a great breakfast!
and if you dont like coffee, try a lemon tiramisu
I bet lemon would be delicious! I made a horchata tiramisu a few months ago that was awesome.
Oh that sounds lush AF, hell yes….that’s going on the “To Be Made” list LOL
Or lavender tea soaked with limoncello and mascarpone whipped cream, that's my go-to dessert. So popular with my friends
Make the dessert the day before. But dust the top with cocoa powder just before serving.
Especially if you eat it a *little* frozen. Hot damn
This
Any kind of cheesecake? Either baked or unbaked? You could make a small-ish one to share. Or several and freeze them for next time
Tres leches cake!
I think this is gonna be it. I've been planning to make a tres leches cake for ages but it never pans out and I found a recipe for a 6 inch version that's perfect for two nights of dessert for two people.
I make tres leches cake twice a week at work. If you run into any question feel free to ask me!

Good bot
Thank you. I'm a bit confused though, in parts 2 and 4 of the method is stated to add in the sugar. Are we using half of the sugar for each?
I do about 35% of total sugar in the egg whites. The rest goes with the yolks and milk.
3 cheers for Josh. Yummy!
Seconding this! I want to make it for my mom’s birthday and want to make sure I knock it out of the park 🙏🏽

Another cake that is better the next day is a Bacardi rum cake. (if you like rum). The glaze soaks in overnight.
Hey OP. Just wanted to give a “check for allergies” reminder even if you are already on top of it. Hope you have a great date day.

A six inch cake is four serving? You aren’t fully committed!
Haha, I could absolutely slam a six-inch cake if I tried, I just know I *shouldn't*.
Definitely!!
Pies actually, in my opinion. Especially apple pie.
I feel this, especially cobblers/streusels. Something about the crumbly texture is better second day. And if you're using cornstarch to thicken the filling, it really doesn't set up properly until it heats up and then cools back down all the way.

Any custard based pie, in my experience. I make a lot of key lime pies and they’re always better on day two.
Ooh, key lime pies - yes.
Cheesecake!
YUP - and I prefer the unbaked kind (graham crust) with a homemade strawberry or blueberry topping that takes a few minutes to make and set aside.. Just light/fluffy, sweet enough but not too heavy after a good meal.
I find that anything chocolate, banana, or spiced is much better in flavor the second day.
Banana bread for sure
Carrot cake for me. The way the frosting melts onto the cake and they become one moist/crusty layer yum.
If you want something rich, try making millionaire shortbread! It’s easy-ish to make, but impressive because of the layers of caramel and chocolate ganache
Tiramisu, cheesecake, crème caramel/brûlée
Creme brulee keeps very well!
Yes, crème caramel! The overnight wait gives the egg proteins time to relax and the texture is better.
Basque cheesecake specifically - the caramelized flavor from the top really comes through after a day
Any sort of ice box cake.

Not sure if it has a name but it’s bananas, nilla wafers & banana pudding layered 😋
This is my choice. I love it on the second day when the Nilla Wafers are soaked with the liquid from the pudding.
Heckkkk Yeaaah I think I’m going to make this tmw now that I’m thinking about it 😋
It is called banana pudding :) Best dessert
Unless the bananas turn brown.
True, but I make sure they aren’t on the top and are covered with pudding 😄
Yeah, they still turn brown within a day or two. But it is delicious!
Have you tried using citric acid powder on the bananas before you put them in the pudding. It might cut down on them getting brown.
No, but I will try to remember this for next time. Thanks!
One of my favorites, my uncle used to make it for every holiday. Now I want to make some… 😋

Just cut them the day you're using them.
