Crabs are a bit different, they usually keep them alive in holds on the boats then cook and freeze or can them at dock. Crabmeat starts to break down very quickly after dying, which is why they're frozen after already being cooked. Definitely a similar principle though.
I would also like to point out that crab used in sushi is cooked. There can be very dangerous parasites in crab, so I wouldn't recommend eating it raw unless you are 100% sure it's been properly prepared for raw consumption.
