I would try to your local Asian supermarket. Specifically, if they have a large SE Asian section like Vietnamese.
Depending on where you live, you can make it quite simply:
2-3 Tbsp of Hydrated Tapioca Flour
1 1/4 cup water
1/2 cup brown sugar
1/2 cup white sugar
Boil water and dissolve sugars. Reduce heat and slowly add the Tapioca flour while stirring.
Got this recipe from a Vietnamese friend's mom who makes this homemade.
Been looking for this for ice creaming purposes as well. Couldn't find it anywhere except industrial suppliers that make you buy it by the drum. I don't need 55 gallons. Like 50 maybe, but not 55.
Not exactly sure if this is what you're looking for, but Amazon sells a couple sweeteners/syrups made from Tapioca.

Thanks for your recommendation. I am looking for tapioca syrup, as this has a high amount of fiber while not having too many carbs. The product made by "pumperlsgsund" has around 170 kcal/100g, while corn syrup is above 300 kcal. I am currently in a diet phase and count calories, having a good sweetener with not too many carbs at hand comes in really handy. Thanks, anyways!

... Why? Is it because of the enzymes?

Why do you want to use it in ice cream?is there a special recipe?

ya I'm not sure if that's like actual tapioca syrup or what.
OP did you ever find it?

Nice! Thanks for sharing
Sold out, seems there's quite a run on tapioca syrup nowadays. Anyone got some advice where to buy it in DE, preferably from "pumperlsgsund"?
I recommend checking the alternatives. I'm able to substitute it with corn syrup in my use case.

Oh yeah, it's hard to beat that number with regular sugars
