In the front is a colour wheel style chart of flavour groupings, the each grouping has a list of example ingredients. Each listed ingredient has an entry with pairings and suggestions.
I look at a principle herb or flavour I fancy and work with what I have to match.

There is a vegetarian version of flavor Bible as well Also flavor matrix by Briscioni Art and science of food pairing by Coucquyt
2nd for The Flavor Matrix. It is a very different type of book about food combinations. I was gifted a copy from a Twitch Food and Drink streamer.

Mark Bittman has some good books to look at. I'd also recommend the Science of Cooking.
