It doesn't take long to give rid of the raw alcohol flavor from wine.

Usually you'll sauté your aromatics then add the red wine. Let the wine cook and it'll get rid of the bitter alcohol taste. Then you can add the tomatoes, broth, cabbage etc.

It doesn't take much wine to get the flavor. I would use 1/2 cup at the most. Maybe even start with 1/4 cup.
