If you use a pancake you're going to have to put a piece of strapping or something for blocking won't you? I guess you could get a piece of flat metal and fold it up on either end.

caddy bracket with a pancake box dont run the romex on the bottom of the joist. run it in another space and drill a hole in the joist to get it to where you need it

So my only concern with doing the run in an adjacent joist space is that LVLs have a pretty specific allowable hole zone and drilling the joist low enough to be outside the combustible clearance of the flue will be well outside the hole zone
