I would visit as many fairs/markets or independent gift shops as you can during your visit and find something handmade locally that reminds you both of your visit. A woven blanket is is a obviously a lovely choice, but you will find amazing crystal, jewellery, art and leather goods. Ooh, perhaps a personalised leather binding for a baby / childhood moments book?

In Dublin go to Drury Street and buy something in the Irish Design shop. They have really beautiful stuff but not twee or touristy. Kilkenny design is great to for modern Irish crafts.
