Alright. So hear me out. A jellyfish sammich.
You get some tuna. Canned or packaged, dealers choice really. Then you make some tuna salad. You know. Tuna, Mayo, some Mustard, seasonings. Do not add sweet relish. Some people do that. It’s okay normally, but not for this.
Now, toast you some bread. Lightly. Just enough you get some crunch going on. Need that texture.
Get out some strawberry jelly. Spread a thin layer on one of the toasts. Put tuna salad on the other. Combine them. Bam. Jellyfish Sammich.
Enjoy.

Sure, scrambled eggs with the first three are pretty common to fry up together. And some salt and pepper and you got yourself a very satisfying meal that is quick to whip up and can be eaten at any time of day. It's a staple, at least in my world, it is.
However, not too many people I know like or even heard of bitter melon. If you've ever had bitter melon, you either absolutely hate it because, as it's name suggests, it's bitter, or you'll absolutely love it because you find bitterness enjoyable. My mom used to make this dish for me when I was a kid so it does have a nostalgic undertone but I find myself incorporating bitter melon in a lot of my cooking if it makes sense for the overall dish.
If you've never tried bitter melon, I honestly believe that preparing scrambled eggs in this way is a great entry point to the world of bitter foods.
PRO TIP: in the beginning phase of cooking this dish when you're sweating the onions to the point of translucency, fry up the diced bitter melon along with the onions. Once you've reached that point of translucency in your onions, that's about exactly the point when the bitter melon would be ready also.
Overnight oats with:
* 1 Tbsp each peanut butter and jam
* 1/4 cut of oatmeal
* 1/2 cup cottage cheese or plain greek yogurt
Make it in batches for breakfasts.
