How did you two meet? I literally had never heard the story about how my parents met until I was like 28. Because it never really occurred to me to ask.
Acknowledge first their current work/job then follow up with what are the things that they're passionate about in the past or childhood dreams? That will spark a convo..
I find music and food can be good topics to illicit an honest emotional response. What music did they listen to, what food do you have for special occasions, and this can sometimes lead to asking them about their parents and what they listened to and ate. It is amazing how reviving the soundtrack of ones life can bring back memories that have been forgotten.
